take the entire thing and submerge it in water.  look for bubbles.  not the best for the equipment but you'll find a leak.

You said in the first post that "this tank has been going strong for months". Question, going strong for months with this new regulator?
My experience has been that when there is a leak, even a small one, the tank is empty in just a few days.

if the tank seems to be fine. and the only issue is the sound and this is not bothersome unless you are close, i wouldn't worry about it.  like a creaky joint. if doesn't hurt and still works fine. i don't care about the noise

If you've tested for leaks and found none, the tank isn't draining, and it stops after a while, I'd guess the sound is just normal operation. I have one regulator that the gas flows quickly and stops right away. The other one I have dispenses the gas over a few minutes before it completely cuts off. Sounds like yours is more like the latter.

But isn't this a brand new regulator?  It was like just last weekend you were looking for recommendations on manufacturers.

You've done multiple kegs since last Thursday?

When it is making noise, rather than shut off the gas from the tank shut if off at the outlet to the keg.  It will probably stop.

My guess is that the keg didn't have as much CO2 in it as the new regulator was set for, so gas kept trickling in.  No big deal.

if it is flowing slowly it may be that the outlet valve is not all of the way open.

Letting beer sit in the fridge at 14psi...still plenty of c02 left so no leak. Let ya know in a few days how it tastes

The high pressure gauge isn't going to tell you if you have a leak.   It will read a constant pressure (determined by temperature) until there is no liquid CO2 left, at which point it will drop rapidly to zero as you vent the remaining gas.
