Vitners Harvest Apricot Puree Gravity

A friend and I are going to brew an Apricot IPA soon, I was wondering what numbers to punch into Beersmith for the gravity.  I ordered two, three pound containers.  So one container will infuse app. 5 gallons of beer.

In The Sand:
Williams Brewing says 1.036-1.048 for this but that is a big difference. Not sure what would be accurate for this.

Fruit purees add both sugars and volume and often the end result is similar or lower gravity.

If you're really curious, you can do a Fast Ferment Test to give you % fermentables.

Or you could just throw it in and see what happens!


It says apricot is 10 brix, so about 1.040 sg.
