I have experimented with both the probe on the outside and insulated and with a thermowell. Monitoring temps at the same time, they were within 1 degree. People have commented on "hot spots" during fermentation and said that the themowell should be more accurate, but I have found essentially no difference. I think the convective movement of the wort durning fermentation distributes the heat evenly.
