Taking a pilsner recipe, and making a steam beer. I need to trim the remaining bottles in my collection and get a few more gadgets before I can truly make a lager...

Sam Adams Boston Ale  8)

5# 2-row, 5# maris, 1lb crystal 60. 1oz wlh fuggles 60 min, .5oz wlh each of tett and hellertauer at 20min and 10min.  wlp022 essex yeast 1900ml starter. dry hop 1oz each of tett and hellertauer.

hochkurz infusion mash - 145F 30min, 150F 20min, 158F 30-40min (iodine negative), mash out and batch sparge with 3.8gal raising grist to 168F.

target mash Ph 5.4. adding gypsum and epsom for sulfate of 100ppm and magnesium 10ppm, cacl2 for 55ppm.

first time using my new oxygen setup for wort prior to pitching at 64F.

I completed a professional goal this week so I'd like to do a small, fast batch of something to relax and reward myself with some brewing. That 15-minute APA is an idea.

American Pale Ale.  I am excited to brew again; it's been 3 weeks!

Follow up question.. What do you guys do when it starts to get warmer and your fermentation closet/area is no longer that perfect 60-66 degrees?  Looking for ideas on brewing during summer in warmer climates.

Another question, if I have a concrete floor utility room with a window, would it be safe to use my Bayou Classic outdoor burner in there, or still too much CO?

If your closet gets too warm you will have to consider building a fermentation chamber.

I don't think you can ever really consider an outdoor burner "safe" indoors.  You have to make sure that you not only have air entering the space but that you have enough air entering and combustion gases being pumped out.  I would more likely consider a window air conditioner to make the room a fermentation chamber and keep the gas outside.

No brewing this weekend....If fermentation slows, I will be racking my Red IPA and harvesting the WYeast American Ale II from it.

Didn't make it to the LHBS, so I brewed a German pilsner to keep my WLP830 going instead of the Vienna I planned on.  Ordered sacks of Weyermann pils and dark Munich for future brews.  Will probably add a sack of Rahr 2 row since I'm about out of MO and would like to give Rahr a shot for my IPAs and DIPAs.
CH3CH2OH - Without it, life itself would be impossible.

my boston ale with wlp022 essex yeast is on fire..after 48hours it is top cropping like a beast. smells really nice like biscuit, fermenting at 65F and loving it.

Possibly brewing a Doppelsticke to pour on the yeast cake from my Northern German Alt (Wyeast German Ale 1007) brewed Saturday before last. Might even step it up to a 10 gallon batch, as I have the capacity for it (SS Keggles, Mash Tun, Boil Pot). I've brewed this twice in the past 6 months, scored 42 @ the FOAM Cup in Tulsa, so its a pretty good recipe. The follow-up batch has been entered into the Bluebonnet Brewoff, but I was unable to register my brews for the NHC due to all of the problems they encountered. Maybe next year.....

Nothing this weekend.  I've got a Rye IPA and a doppelbock fermenting now.  This Thur. I'll start some yeast for a dubbel or tripel I'll brew next week.
Life begins at 60.....1.060, that is!
