DMS in extract kit

Is DMS not a concern for an extract kit? And if it is not, does this mean I can avoid boiling the mash for 60 minutes? Thanks.

You're correct.  The only reason to boil extract for 60 min. is for hop utilization.
Life begins at 60.....1.060, that is!

Boiling is going to do more than eliminate dms.  Your bitterness will be partly determined by boil time among other things

Extract is pre-boiled, so the DMS should already be driven off.  Hop utilization would be the reason to boil longer.

So hypothetically if a kit came with one hop addition at 30 minutes, I could theoretically only boil for 30 minutes? (Considering the full instructions stated a 60 minute extract boil)

Absolutely. I do his all the time when trialing new ingredients. Look up the 15 minute Amarillo Pale Ale Episode on Basic Brewing Video for some good info.

DMS has been boiled off in the manufacture of the extract.  A boil is not necessary.  Going for a pasteurization temperature and time may not be a bad idea.  If you do boil the extract, and the boil is not vigorous, you will create the precursors for DMS.  Found this information at Coopers, AU last night.
