APA w/Galaxy and ?
« on: April 05, 2013, 12:53:25 pm »
I usually brew my rye APA heavily late hopped with Amarillo, Centennial, and Simcoe.  I'm planning on a different twist with some lots of late Galaxy hops instead.  I wanted to mix the Galaxy with another hop.  I thought of doing Citra for a kind of "2 hemisphere" APA, but I'm worried about the Citra overpowering the Galaxy.  If I go with a 1:2 (or even a 1:3) ratio of Citra/Galaxy, do you think that balance would work.  I'm open to another hop besides Citra, too.
Well...I woke up this morning and I got myself a beer

i've not tried it personally, but I've read Nelson is a nice match to Galaxy 50:50.

I've done Nelson and it was awesome.  I've done sorachi ace and it was very good. So was calypso.
I've mixed galaxy with pacific jade, PAC gem and motueko in a pale ale. Very good but all similar Southern Hemisphere hops.

I just did an APA with 1 ounce of Citra for bittering, Galaxy at flameout, and 2 ounces of Galaxy dry hopped.  The passionfruit notes really came through with the aroma and the flavor out of primary fermentation.  I can't wait to try it next week before I keg it.

Served the Citra and Galaxy APA at my wedding and it was a hit.  It was far and away the favorite of my wife and I out of the 3 we had at the wedding.  15 gallons of homebrew was gone in about 4.5 hours.

I've brewed a steam beer with Nelson and Galaxy that was really excellent.  Recently, I've been doing a blend of NB and Citra for flavor and Galaxy and Cascade for aroma, which has also been a winning combo.
