ESB suggestion - Victory or no?
« on: May 21, 2013, 02:17:40 pm »
So I'm brewing an ESB tomorrow morning. For the longest time I was planning a simple grain bill of 93% MO and 7% English Extra Dark Crystal. But I woke up this morning and the idea popped in my head that I should add some Victory. On one hand I like the idea of letting the MO stand on its own, but a little extra toastiness could be nice here. Anyone have any strong thoughts or experience either way on this?

Nope. Don't need it. Maris Otter plus dark crystal equals good ESB malt bill.

The best ESBs I've had were always the simplest ones.

doesn't even need to be dark - my local made a 93/7 with MO/English light Crystal (the 45-55L stuff), all EKGs and 007 yeast -one of my favorite beers of theirs - simple recipe, yet complex.

+1.  I love MO with some English crystal 60, 1968, EKG.  A recipe where the simplicity really works.

Not for today, but I'd try floor malted marris otter to increase breadiness and keep it simple.

I agree simplicity is best.  IF you were to add any Victory malt at all, I would keep the amount very very low, maybe 3-4% of the grist.  But personally I would skip it.

Thanks for talking me into keeping it simple everybody. The beer gods have rewarded me by hitting my mash temp to the tenth of a degree. The boil is going strong now and the runnings tasted damn good.
