I love 19th/20th century factories, and my favorites are (of course) breweries.  The Denver campus of the University of Colorado (Auraria Campus) sports a wonderfully renovated 19th century Tivoli brewery as its student union.  It is worth a self guided tour (they have the old copper kettle and other equipment displayed) if  you are in Denver for the GABF.  It is about a 6 block walk southwest of the convention center.
You wouldn't believe the things I've seen...

the Argus Brewery in chicago is kind of cool also.  It is from the old Schlitz building where they housed their horses.  still has the functioning old elevator the sized of a wagon

I've always like the Schoenhofen Brewery in Chicago.  Years ago I was told it has an artesian well on site.  I have no idea if that is true.

The horse heads are a nice touch, too.



I go by there twice a day on the Metra. I love the old Schlitz tied house up the road that has the Schlitz logo in the stonework.
It's such a fine line between stupid and clever.

I got to take a tour about a year ago. hung out in the tasting room with the brewer and owners.  very fun.  part of the first floor at that time was an auto repair shop.  they sponsored a race car that a girl my daughter played softball with had.  little black miata with "Pegasus" on it.

I agree with gsandel, the Tivoli student union is awesome. I went to UCD for a couple semesters, before I finished in Boulder. So it's sort of my alma mater.

Very cool.

I always thought the Grain Belt brewery in Minneapolis is pretty impressive:
