Best salt addition to boost back carbonates?

Pickling lime will raise pH easily.

Yeah, that's what I was thinking, too.

I wouldn't boil but merely drive temperature up to 170 to pasteurize. No reason to boil off aromatics if you don't have to.

Be careful if you use pickling lime, it can raise pH very quickly.
