If you are in the Northeast, the Woodstock Inn and Brewery in Lincoln, NH has a Brewer's Weekend package. http://www.woodstockinnnh.com/packages.php.  If you are not in the Northeast, check some of the local small breweries and see if they offer something similar.

1) AmandaK has a great idea there.....

2) An out of state road trip to his favorite brewery (or several).

3) Is there another passion/hobby?  Maybe cooking?  Here in Indy a local butcher has "butchery classes".  My brewing compadre and I learned how to do seam butchery on a hog and also how to make charcuterie items from the different cuts.  There was some nice local micro-brewed beer involved as well.  We have since started processing our own hogs several times a year.  It's a perfect companion to brewing and quaffing.

I'd be pleased with a sack of malt. Or a custom gold-plated tap handle.
+1 a sack of two row.  Not memorable, but functional.
Or a sack of a grain you wouldn't normally buy. I would be over the moon if someone got me a bag of Maris Otter or Munich or something like that.

If I were him, I'd like a wine kit. I'll never get around to getting myself one, but if one showed up I'd be all over it.

You can order pub glasses that have his brewery name on them - if he doesn't have a name for his brewery, then make one up for him and get him the glasses to make it official!

There ya go. The Belgian Tulip glasses on this sight are my favorite beer glasses. They have engraving options.

Thanks to everyone who chimed in here......my budget is usually about $50, my apologies for not mentioning that.  There were some great ideas (I loved the "Chopped" idea....that sounds like a blast).  Thanks again!

Just one more, why not be DD for a brewery tour at your local brewery hotspot. Better yet, get your spouse to do it so you can imbibe as we'll!

Is that a counter-pressure bottle filler in your pocket, or are you just happy to see me?

Do like Rogue Brewery and culture a wild yeast strain from your beard / hair. (Brewmaster's Beer'd). That'll  be personal and unique  ;)
