How many brett vials per barrel do ya think?

I'm aging some a big, dark belgian in cabernet bbls and want to add brett b. Was thinking about 3 or 4 vials per bbl. What do you guys think? The bbl size is 60 gallons.

That's about what I'd do, probably. I think that with lower pitching rates you'll get more barnyard and less fruit from it, so it could also depend on exactly what you want. If you're planning on aging it a long time I might do 2 vials/bbl (31 gal).

It seems like a good start to me.  You can always add the dregs of bottles you like as well.
