White IPA
« on: November 18, 2013, 08:59:17 pm »
Brewing with a buddy on Black Friday. I wanted to brew a common and he wanted a wit. Settled on White IPA. Here is what I came up with.

10 Gallon
90 min boil
Mash 151º
60 IBU
6.7% ABV

21.5 lb 2-row
5.5 lb wheat malt
2.5lb flaked wheat

FWH - 1.5 Simcoe - 41 IBU
10 - 1.5oz each - Cascade, Centennial, Simcoe - 19 IBU
0 (+20) - 1.5oz each - Cascade, Centennial, Simcoe
Dry - 2oz each - Cascade, Centennial, Simcoe

Wyeast 2565 - Kölsch @ 58º

Maybe a bit of coriander at flameout? If so, how much.

Looks delicious to me.

I have been wanting to do something similar but with 50% wheat. I have used 1 tsp of coriander in 5 gallon batches of wheat beers with good success however this was prepackaged ground coriander not freshly crushed.
On Tap/Bottled: IPL, Adjunct Vienna, Golden Stout, Honey Lager
Fermenting: IPA
Up Next: mexi lager, Germerican pale ale

Doesn't look too bad at all to me.  I recently brewed one for the brew pub where I work on the side and used around 37% wheat in the mash and added some flaked oats and rye to round the brew out.  In the end it turned out great.  Coriander is a great idea and it's best to go light if you decide to use it.  Maybe a quarter tsp since it's quite potent.

Ended up going with 21lb 2-row, 5 lb malted wheat, and 4 lb flaked wheat. With the Kolsch yeast and flaked it should be pretty hazy. I may throw in 1/2 lb rice hulls for sparge insurance.

Rice hulls will definitely help, I'd suggest adding them as cheap insurance.  Keep us posted on the beer, I'm interested to hear about your results.
