Hopped Up Brown Ale
« on: March 25, 2010, 01:43:12 pm »
I need some suggestions to Hop Up a standard Brown Ale.  What hops match that beer style the best but still add that punch?  Any help would be great.

Denny,
What kind of flavor do you get from a Willamette/Chinook combo?

Why, a good flavor, of course!  ;)

Chinook makes a really nice finishing hop....based on this recipe I've used it to finish in others.  A nice kinda piney, resiney, floral thing.  The Willamettes are a pretty smooth bittering hop and give a kind of earthy flavor.

Here's a clone of DFH Indian Brown Ale which is very good as well.

All Grain Recipe - Indian Brown Ale ::: 1.072/1.019 (5.5 Gal)
Grain Bill
12 lbs. - 2 Row Pale Malt
3/4 lb. - Amber Malt
1/2 lb. - Crystal Malt (60L)
1/2 lb. - Chocolate Malt
2 oz. - Roasted Barley (a little goes a long way)
1/2 lb. - Dark Brown Sugar (added with 10min left in boil)

Hop Schedule - 52 IBU
1 oz. - Warrior - 60 min.
1 oz. - Vanguard - 20 min.
1 oz. - Vanguard - at Flameout

Yeast
Wyeast 1187 Ringwood Ale Yeast - 1800 ml. starter

Mash/Sparge/Boil
Mash In at 154° for 60 min - sparge as usual
Boil time : 60 min.
With 10 minutes left, add in the Brown Sugar
Cool and ferment at 71° to 74°

Notes
An extract version of this Recipe Appeared in Sam Calgione's book : Extreme Brewing.
I have changed it to all grain and rounded off a few weights for the sake of simplicity.
Also, I added hop additions as the original recipe equaled out to only 22 IBU, yet the beer is listed in the book and on the DFH website as 50 IBU.

I thought I read in Radical Brewing that Chinook works well with Porters as it pairs nicely with chocolate...could be way off though.  Going by memory on a very slow wednesday....
