Make My Beer Medicinal
« on: January 03, 2014, 09:06:57 am »
That's right, you heard me.  :P

At my homebrew club meetings, I want to start doing some educational talks regarding off flavors.  This month I am doing a presentation on Phenols.  After looking at the BJCP Study Guide, it says to use Chloroseptic to produce the medicinal flavor.  Apparently I can only find the flavored versions around me...no plain old chloroseptic.

The one I have is cherry flavored.  If I use that, will the medicinal characteristic come through or will it just taste like a cherry-cough syrup beer?

Any other ideas on how to get the medicinal flavor in a beer?  I plan on buying some Coors Light (first time in nearly 20 years) to doctor for the meeting.

Thanks.

Gross.

I am betting the cherry flavor will come through pretty strong.

Maybe an old plastic bandaid marinade?
Can you add some concentrated chlorine?

Like I said.  Gross.

Umm, have fun. ;)

Add a little bleach.
or don't do anything that will remove the chlorine in your brewing water

Try using actual cloves.  Phenolic clove-type aroma and flavor can be great when recipe/yeast-derived but not so much when created otherwise.

Sorry about having to purchase Coors.

How much bleach per 12 oz can would you recommend so I don't kill anyone?

I thought it was yeast that turned chlorine compounds to the medicinal phenols. I don't think you will get the same effect by spiking a finished beer. Maybe dry-bandaiding? Or unflavored Lysterine?

I also think adding bleach will make the beer taste like bleach, not phenols.  Most of the newer bandages don't have the medicinal smell either.  What about isopropynol?  That always smells like a medicine cabinet to me.

Yeah, I was only kidding about adding bleach. You need active yeast to consume the bleach to create chlorophenols and often takes a while to reach the flavor threshold.

Is there another club locally that might have something you can borrow out of their BJCP materials?

Ha...I'm such a sucker!  ;D

Maybe the unflavored Listerine suggestion above would work (I actually like the taste of this stuff....weird, huh?)

Phenol is one of the active ingredients in Listerine, fyi
