I have a few pounds of Ultra that I picked up on sale from Hops Direct the past few years, so they've become one of my default noble-type hops for Belgian brews. Any noble type hop will be fine as a sub. Sterling, Hallertau, Saaz, Styrian Goldings, etc. will all be fine.
