Festbier -  out of season, but it will still be hot here for a while.

First time using Brewtan-B today.

Missed gravity by 5 points. May have to call it a Dort.

Festbier is never out of season.

I've got grain crushed for a BDSA I hope to make after Thanksgiving.  Also need to crank out a couple extract batches and I'm jonesing to brew something on the Zymatic.

Kegged up a Wee Heavy today with the boil down method. Pretty big malt flavor for only two malts used.
Hydrometer sample tasted great!

I brewed my first old ale last weekend. Used a new fermenter and temperature controller rig. Thrilled with how strong the primary was. Pulled a sample and it already tastes great. Will keg and serve fresh then fill a couple of bottles for cellaring. Next up, in a few weeks, is a double brown stout. Will be my first beer using lactose.

Old ales are one of my favorite brews. I gotta plan to make one again next summer so its ready when the cold a** winter rears its ugly head around here.

Brewing my Pils again this weekend but this time with Saphir to finish instead of HMF.  Hope it turns out close to the one currently on tap.  It's be far and away my best Pils ever.

I really enjoyed the G Pils I did with Saphir this summer. It's a tasty hop -  noble-ish but with its own spin.

In attempt to avoid the madness of Black Friday I will be staying home and brewing up a small batch BIAB Chocolate Porter inspired by the Boulder Shake. I am still playing around with all grain brewing as well as doing test batches using a Mr. Beer LBK for fermentation.

I have a Scottish ale fermenting right now: what I call an 85 Shilling (1.052 OG). First time using Wyeast 1728 and love how it is chugging along at 58 degrees in my cold basement. Only used Golden Promise and a touch of black roasted barley; carmelized a quart of the wort and then boiled the whole thing for 75 minutes to make it chestnut brown/amber. It is a happy Thanksgiving indeed.

Sounds great. Sort of Negra Modelo-ish? Regardless, I bet it goes quick!

Yep. Negra Modelo was the inspiration for this beer. The original idea was to use Pilsner malt but I swapped that out for Munich for slightly more malt. I increased the IBUs by 10% from the first batch to cut through the malt a little more.

Yesterday I prepped grain and hops and fermenters, and today I brewed:

11 gal of kaffir lime leaf + galangal (Indian ginger) saison (WY 3711) at 1.054 OG, plus

11 gal of a Red IPA I put together based on what was on hand, including 11.5 oz of mostly wet centennial hops that had been vac-sealed and hard frozen (2 yrs old but looked and smelled fine).  In the interest of saving time during runoff I didn't crush hard and came in low with a 1.062 OG, but recipe as follows:
