Must be amber lager season.

Finally getting around to brewing again after a long hiatus. As I have no lagers in my chest freezer, time to get one going. As I have little or no noble hops, I opted to make an amber festbier instead of my usual pils.

OG 1.055 10 gallons

15 lbs. Avangard Pilsner malt
8 lbs. Avangard Munich malt
1 lb. Weyermann CaraMunich III
4.5 oz. Weyermann Carafa II

Mash in at 158°F for 90 min. Batch sparge

0.9 oz. Hallertauer Mittelfruh FWH
1 oz. Saaz FWH
1 oz. Clusters 60 min
1 oz. Northern Brewer 60 min
1 oz. Hallertauer Tradition 10 min

To be split between 34/70 and WLP 800 pilsner.

I brewed a Saison Noël

1.052 OG; 5 gal

-  5 lbs. Belgian Pilsner
-  3 lbs. German Vienna 
-  1 lbs. Torrefied Wheat

-  1 oz. UK Kent Goldings (60 min)
-  0.25 oz. Styrian Goldings + 0.25 oz. Saaz (10 min)
-  1 oz. Sweet Orange Peel (5 min)
-  0.75 oz. Styrian Goldings + 0.75 oz. Saaz (2 min)

- pitched Danstar Belle Saison at 1300. By 1800 I had airlock activity.

I have an APA planned for tomorrow morning.  I'm going to deviate from my usual APA grain bill and try something new.

2-row (85%)
Crystal 15 (8.5%)
White wheat malt (6.5%)

Bitter with Magnum, finish with Citra and Amarillo

Two packs of Wyeast 1272

This will be a low oxygen batch so I'm going to skip the dry hops.

It seemed really appealing when I was ordering ingredients two weeks ago, but with the sudden change of weather I kind of wish I'd planned an oatmeal stout instead.  Hopefully, I'll be able to squeeze in one more batch before the end of the year.

Today I have my 3rd brew session in 4 weeks which is unheard of for me as I usually brew every 3 weeks.

4oz sinamar added at boil

Thanks, I'm really hoping the carafa III doesn't come through too much. Planning to add it at the end of the mash, or halfway through when I add step infusion water. Low oxygen is messing with me. It was easier before when it was ignorance is bliss.

I have a schwarzbier fermenting that was brewed last weekend.  And a double IPA dry hopping with Calypso and
Azacca, very fruity.  BVIP is soon.  I brew it at least once every year, awesome winter brew.

I add my color adjustments during the first sparge.  Haven't had any issues with flavor influence.  I try not to worry too much about it.

Yeah, hopefully so. Honestly I'm wondering if brewing porter and stout (or any roasty beer) non-lodostyle  is the way to go. If the roast is amplified that much in malts like midnight wheat and carafa in lodo, then I can't see how to make a roasty stout work otherwise. Roasted malts are high in antioxidants. Maybe it's the answer for dark, roasty beers.
