Tropical C.r.E.A.M.  Citra, WaRRioR, Ekuanot, Azacca, Mosaic - little play on words plus a play on a Wu Tang acronym.

2 row plus some Carahell and Munich.

An ESB with Simpson's Golden Promise and Double Roasted Crystal. I am going to try First Gold hops in this one as well.

5% caramunich I

Bitter with magnum
Cascade, spalt, crystal at flameout and dry hop

Undecided on yeast. Either k97 or G03

Up Next: mexi lager, Germerican pale ale

This weekend is my Old Ironsides Pale Ale

12 lbs 2-row
2 lbs Munich light 8L
.75 oz Magnum (60 min )

1 oz Cascade (5 min)
1 oz Citra (5 min)
.5 oz Cascade (0 min)
.5 oz Citra (0 min)
.5 oz Cascade (dry hop)
.5 oz Citra (dry hop)

Wyeast 1056 American Ale yeast

OG: 1.062

My conversion efficiency has been suffering, so after some research on this board and elsewhere, I asked that my grain be milled twice, and I'm upping my strike water to 1.75 qt per pound of grain. That should fix it.

I brewed a Cream Ale this morning and Sunday I will be kegging/bottling an Imperial Porter.  I have a case of bombers, I'm going to add some coffee to some and vanilla to the other half of those that get bottled to mix this batch up.

I keep thinking about building a Cream Ale but I just can't do corn. I wonder how Flaked barley would work. Maybe 70% pils 30% Flaked. Then something light like Willamette and all in whirlpool. 1056 but on the chilly side to hold back esters a little.

Wouldn't the barley give you extra body that the corn was intended to avoid?  Perhaps using some rice in it would work for your purposes?  Or maybe grab a couple boxes of those "Ancient Grain" flake cereals and chuck those in for an Ancient Cream Ale.  Or maybe Agave syrup?

Brewing friend of mine coming down from Minneapolis for a brew day....  we get together a couple times a year and brew a couple unique beers and split them.  On deck for tomorrow...... Citra Saison up first.  Second batch will be a Brett IPA with Citra/Mosaic/Galaxy and using Funk Weapon #2 yeast from Bootleg Biology.

I think I'd have to walk away from the style guide and call it something else

Yeah, the flaked barley would definitely give extra body (and haze) at that amount. Cream ale is one of my lawnmower beers. I really like 40% pils, 40% 2 row and 20% flaked maize lately. Good on a hot summer day.

I actually used flaked rice in this one...more nuetral flavor. I actually like the corn contribution but wanted to give the flaked rice a go.
