I brewed a Cream Ale this morning and Sunday I will be kegging/bottling an Imperial Porter.  I have a case of bombers, I'm going to add some coffee to some and vanilla to the other half of those that get bottled to mix this batch up.

I keep thinking about building a Cream Ale but I just can't do corn. I wonder how Flaked barley would work. Maybe 70% pils 30% Flaked. Then something light like Willamette and all in whirlpool. 1056 but on the chilly side to hold back esters a little.

I actually used flaked rice in this one...more nuetral flavor. I actually like the corn contribution but wanted to give the flaked rice a go.

Flaked rice, or at least rice, also was a traditional ingredient in Cream Ales. I have used flaked rice in some beers, and it has a different impact on the beer's flavor.

They play really nice IMO. Used them together quite a few times. Not far off the Amarillo/Simcoe thing but yet has its own thing going.

I haven't used Chinook in a couple years and Amarillo is probably my favorite American hop which I use quite a bit. The last couple of years I've been busy trying all the new hop varieties...kinda nice to get back to the classics.

For sure. I like to try the new ones, too. But that Arrogant Bastard-ish beer I made last year with all Chinook (like Stone) was fantastic.Forgot how much I like Chinook.

On Monday I'll be making a Bohemian Pilsner - pretty much one of Jamil's takes and based on Pilsner Urquell, but instead of a decoction or step mash I'll be mashing single infusion at 154 - 155F, Best Pils malt with 9% carapils -- also a tad of vienna (3.5%).  All Czech saaz hops, and WY 2001. 

My LHBS owner told me today that Wyeast will be removing that yeast from their year-round inventory soon because not enough people are buying it often enough.

2000 Budvar Lager
2001 Pilsen Urquell
2035 American Lager
2042 Danish Lager
3333 German Wheat
3562 Forbidden Fruit
3942 Belgian Wheat

Milk Porter, basically english porter with some some rye and lactose in it for body and 4.2% ABV. 

5.75lb Maris Otter
1lb Oats
1lb Rye Malt
12oz C40
8oz Chocolate
8oz lactose
3.2oz Carafa III dehusked
2oz Roast Barley

Some hops to 18IBU @ 60 (not sure what hops, I have Mt Hood, Ultra, Cascade, Columbus, and Zythos)

Wow, he had mentioned the 2001 was one on a list.  Thanks for sharing that list!  I thought Forbidden Fruit was pretty popular.  I guess not, or maybe not any more!  At least the yeast I got was made this week.  I bought malt and hops for a second 10-gal batch, for the re-pitch.  We'll see how that goes - I have a second hip replacement coming up the end of March, so not sure if I'll still have viable saved yeast by the time I can brew again.

Guess I'm getting back into yeast banking...it's almost criminal that 2001 is going away. Too few home brewers/creaft beer fans appreciate lager to begin with...but to stop selling the original pils yeast...
