I've got a saison planned for this weekend.  I'm going to pitch a blend of 3711 and 3724.

If you have time, try 3711 and Dupont dregs.  The dregs don't even need to be stepped up and you get to drink a bottle of Dupont which contains 3724 and more strains.  The result is good.  No stalls.  3724 flavor with 3711 dryness.

I pitched the 3724 since I had already purchased it, but that sounds like an interesting idea.  It could also be fun to try growing up some dregs.

Going to wait out our Russian Imperial Stout, and after the holiday weekend, we might start our first mead to get it in the fermenter and start the wait on it.
Once we get the RIS bottled, we may start a Belgian Saison, thinking we may need to start an ale, so we can get the procedure down to nail clarity. Something simple, haven't looked yet for any candidates for the beer.

Brewed an APA with Chinook last night--first time using Chinook: 1 oz. for littering and one quarter oz. at flameout (along with 1 oz. of Cascade). I've kept on the APA side of pale ales--haven't brewed an IPA, and don't usually order an IPA when out--but if this comes out OK, who knows?

Doing my first decoction mash on a Czech Lager this morning. I am a bit nervous about it but as long as I keep stirring it sounds like it will go fine.

First brew in the new house. We closed August 31, then I was busy with household move + business travel in September, then had an interesting month with nearly two weeks sheltering in place during the Northern California fires (all was fine where we were, we only lost gas service for a few days, just... wow).

Thinking I will probably repeat my last brew, which was a 3-gallon batch of oatmeal stout with Golden Promise, toasted oats, a little Victory, crystal malt, chocolate malt, and roasted barley, and Wyeast London Ale III. I had planned to flavor it with coffee and chocolate, but it was so good just as it was I didn't do that. I have had trouble with oatmeal stouts finishing too high and too sweet, but this batch was perfect. It was the first time I used that yeast so of course I assume that's why!

I will name it N-95 (for the masks we wore for a couple of weeks).

Working on a lazy NE IPA/IPA (no oats, wrong yeast, etc). But I am trying the 2:1 chloride: sulfate level, and splitting to try half double dry hop and half whirl pool/dry hop.

Looks like my kettle is... Just big enough.

Just a batch of water for me this weekend. Gave the new system a good going-over, I've got a couple minor leaks in the tubing to fix, as well as a very small gas leak. Neither should be much trouble to fix.

May not be beer, but it's a step in the right direction...
Corn is a fine adjunct in beer.

And don't buy stale beer.
