A witbier planned for Friday. Usually I brew a wit in the summer, but I'm using kumquats--and where I live (Massachusetts), they only come out around this time of year, so want to use them while fresh. (Last year couldn't find them--used some I had frozen over a year before--turned out awful: medicinal/citrusy: my first dumper.)

20% oven toasted flaked rice
6% carahell

Sterling @ 60 and 10 min for 23 IBU

White labs sake yeast
On Tap/Bottled: IPL, Adjunct Vienna, Golden Stout, Honey Lager
Fermenting: IPA
Up Next: mexi lager, Germerican pale ale

This sounds pretty interesting. Have you done this before?

I have done many different iterations but not this particular version. Last year was a rice adjunct lager with sake added at kegging. Rice is known for not attributing any flavor so I am curious how toasting it will affect the profile. I haven’t used the sake yeast in a couple of years but it works really well in beer. That is, if you like sake...

German Blonde (Fest-ale) 82% Pilsner, 18% Light Munich, with 28 IBU Hallertau Mittelfruh (bittering and flavor), American Ale yeast, and Yellow Full water. 1057 OG.

Just curious  --  some would say now is the time for DRINKING a Doppelbock; when are you expecting yours?  Or are you even trying to be seasonal?  I have trouble planning ahead ....

I brew my lagers in the winter. The tap water is cold, so chilling goes faster. Towards the end of chilling I switch to a pond pump and recirculate ice water. The snow banks by my driveway are a big supply of ice and snow. Fermentation is in the big refrigerator that doubles as my garage.

I don’t mind some Doppelbock when it is warm out. Mine might last to next winter.

Oh and my old camp chef finally died so I'll be trying out a pair of new Gas One high pres burners. I had to buy a stainless table to put them on, so of course, I needed a new stainless head for my pump. Looks like I have some mechanic work to do before flame on

Curious to see how you like the 1028, Jim. Makes a nice porter or stout and performs well. Nice esters without being overly fruity.
