Back in the saddle again! Two no-sparge Pale Ales, one old school with Cascade and Centennial half n half in the whirlpool, and one with half Crystal and the other half equal parts Simcoe, Vic Secret and Mosaic.

I brewed old school yesterday as well.  10 gallons of Dean Larson's Sierra Nevada Celebration Ale clone recipe.

I'm brewing so old school that I am fermenting it in glass carboys.  :)

German pils this weekend. 1.048/35 IBU. All Mittelfruh. No need to reinvent the wheel.

German pils this weekend. 1.048/35 IBU. All Mittelfruh. No need to reinvent the wheel.

I need to brew another Pils here soon. Are you still using Barke Pils malt Jon? Is that 35 IBU with just a 60 minute addition?

Yeah, love the Barke malts, Frank. Gonna add ~ 20 IBU @ 60, the other 15 @ 20 mins. 1-1.5 oz at flameout.

been about 6 weeks since my last batch; time to get back at it.  brewing a dortmunder this weekend.  looking forward to it.

Brewing a tropical stout that I'm going to later age on spiced rum oak spirals.  3 gallon version of a "barrel aged".

Just hope SOMETHING'S  brewing this weekend.   Yeast rinsed, hops weighed out, malt milled, water treated  --  and a water main breaks up the street!  They're just letting it run out because there are a lot of breaks to get to in this cold.  That's okay.   But if the city suddenly gets efficient and they start to work on it tomorrow, my water will go off!  I'll  get up early, work as quickly as possible, and hope to get it chilled and in the settling tank.  (Racking, pitching and O2 gear also sanitized and closed up!) At that point, I'll let some equipment go unwashed for a while. Wish me luck, everyone!

Anyway, if I get it in, (back to topic), Helles 13°P, Weyermann Pilsner,  ~21BU, Mittelfrüh and Saaz at 15 minutes for 25% of BU, rest Galena at 45, 34/70 yeast.

No brewing this weekend. Just kegged a German Pils for spunding today, and gonna brew an APA next weekend. Leaning toward Azacca/Cascade on the APA. Luckily no shortage of hop choices here.

Quick turnaround New Year's Eve beer on Saturday- Azacca/Cascade APA. 1.054/40 IBU, WY1450.  73 2-row/20 Maris Otter/7 Caramunich II. Just enough time.

A witbier planned for Friday. Usually I brew a wit in the summer, but I'm using kumquats--and where I live (Massachusetts), they only come out around this time of year, so want to use them while fresh. (Last year couldn't find them--used some I had frozen over a year before--turned out awful: medicinal/citrusy: my first dumper.)
