Pressed 10 gal. of apple juice.  Fermenting 5 with 1450, 3.5 with BRY97.

Any additions ? ,or just straight apple juice ?
Did you boil ?

Thanks

Just juice.  I've tried a number of additions over the 20+ years I've been making it and decided I like to let the apples speak.  Never boiled. Can't see why you would.

Thanks !
Do you carbonate ?

Yep.  Keg half of it, bottle the other half.  Seems to really improve after about a year.

just made a 1.08 imp stout
Was it all grain or some DME/LME added in to hit that gravity?

it looks like it was 86% (i believe by weight) grain, 14% DME, no sucrose/dextrose

sparge was sticky and slow. tastes good. 77 IBU of ger magnum and simcoe

Tomorrow I’m going to brew a beer that I have brewed at least once every year for the last 15 years. Amarillo Rye Pale Ale.
