I think we can all agree that you must be completely clean, have spotless sanitation and top notch fermentation practices. Gotta have it all.

Sanitation, Sanitation, Sanitation.

But before that, Cleaning, Cleaning, Cleaning.  You can't sanitize what isn't clean.

Testify...then clean some more. They say brewers are just glorified janitors. I think they use the term glorified loosely.  ;)

 ;D.

Regarding fermentation temperature control.....
I will just add that "proper" or "top-notch" fermentation control does not necessarily mean you need a specialized and controlled fermentation chamber...

I opened a bedroom window yesterday night to maintain an eruptive IIPA at 63 degrees.  ;D

Is that really anything that improves brewing, even remotely?  That is the problem with beer raters - learn to brew and then see how difficult it is to make a commercial brew that measures up to the best homebrews!

Hey, don't beef the consumer! Even the overly nerdy, look how snobby I am, can't find a date, watch me chug Zima type. They deserve our respect and acceptance.

Oh, sorry.  They are brilliant and talented.  Even though they have no clue about brewing....

I've looked at those ratings sites for entertainmant value. What a joke !  My favorite is the guy who on his first post thought SA Boston Lager was the greatest beer in history bar none, 20 posts later proclaims Magic Hat 9 a home run, then by post 50 has graduated to thinking that only IIPAs and barrel aged RIS are worth a rating over average. Funny stuff.

This was meant as a jab at BA.  I left them years ago because of a few individuals in the homebrewing forum saying their way was "the" way and other opinions were wrong.  That and all the thread locking that goes on over there.

My regular forums are the AHA, the BN and Homebrewtalk.  The AHA is definitely one of the best!

Welcome to the community!  I guess you could call me an "excited oldie" even though I'm only 34.  Coming up on my 10-year brewing anniversary and I still get all fired up about brewing.

That's what makes this such a rewarding hobby - there's always room to learn and improve your craft.  Each brew is a bit of an experiment and a chance to implement some new knowledge that you've gleaned.  You can justify buying microbrews as "research" before you pull the trigger on brewing a full batch.

The others are right that you're lucky to have so much current information fully searchable in this forum and others (the Northern Brewer forum is still pretty good).  It's great to have so much experience all together in one place.

You're on the path - enjoy the journey!  Cheers.
