Cherry Wheat Ale

This is my first batch I made not using a kit. I have have received positive remarks on it. The cherries give it a slight sweet taste to it, while the wheat and rye mixed make it crisp and dry . The 7 dwarf that describes this beer would be happy with a slight bit of sleepy.

OG: 1.062- SG: 1.038- FG: 1.014
IBU: 40-45

Grains:
1LB- White Wheat
1LB- Faked Rye
1LB Faked Wheat
Fermentables:
6.6 LB of LME, Extra Light

Fruit:
1 package of dried cherries; 5 oz

Hops:
1oz Warrior Pellet
1oz Liberty
1oz Cascade (dry hopping)

Yeast:
1 package Safale S-04

---> I steeped the grains in 2.5 gallons of distilled water for 45 mins.
---> Then brought it to a boil and added 3.3 LB of LME and boiled it for 15 mins.
---> I then added 1 oz of Warrior Hops (15 minute boil)
---> Added the remaining LME (15 minute boil)
---> Add 5 oz of dried cherries (15 minute boil)
---> Added 1 oz of Liberty Hop (15 minute boil)

Couple of things I noticed.

Flaked grains need to be mashed with other malts because they don't have enzymes to break the starches into sugars. You said you used white wheat, perhaps that is a wheat malt but i would question wether there is enough enzymes to convert all the starches.

Generally you don't boil fruit as it sets a pectic haze that will not clear. Since this is a "kinda wheat beer" (traditional wheat beers must contain 50% wheat) the haze might not be a problem for you. But generally fruit is added at secondary and it is really not a good idea to boil it.

That said, I am glad the recipe worked for you. But with some tweaks you might even be able to improve on it!

Been brewing for 19 years and its still a work in progress! That's the fun of brewing!
