Secondary hops question

I brewed this 2 gallon extract today, inspired by a 3F Gumballhead clone...

5.3 oz    Caravienne Malt (22.0 SRM)    Grain    1    8.2 %
1.00 oz    Amarillo Gold [8.50 %] - First Wort 20.0 min    Hop    2    27.8 IBUs
2 lbs    Wheat Dry Extract (8.0 SRM)    Dry Extract    3    50.0 %
1 lbs 10.7 oz    Light Dry Extract (8.0 SRM)    Dry Extract    4    41.8 %
1.00 oz    Amarillo Gold [8.50 %] - Steep/Whirlpool 0.0 min    Hop    5    0.0 IBUs
0.4 pkg    California Ale (White Labs #WLP001) [35.49 ml]    Yeast    6    -

I plan on adding another ounce of Amarillo as secondary hops, but I kept way too much (what I thought was grub) and ended up only pouring about 1.5 gallons into the fermenter. Should I still stick to the 1 ounce or scale it back because I'll have 1.5 gallons of beer now?

Go for it. A bit too much dry hop isn't going to throw the balance off like too much bittering

In the future should I err on the side of using all the boil including trub?

Or increase your target post boil volume by .5 gallons

You're good with 1 oz dry hop. For IPAs, I like to dry hop with an ounce per gallon. Some even do more.
