WLP002 first experience

LHBS didn't have the yeast I wanted but did have WLP002.

This is fine because I was making a porter/stout.  Read the description and thought it would compliment fine.  No problems.

BTW - man liquid yeasts are expensive.  :o

Made my starter.  No issues.  Next day its floc'd out ... but I notice the yeast cake "jumping" or "bubbling".  Weird.  Cold-crashed the starter and the bubbling went away. 

Brewed and pitched my yeast.  Fermented great. But then the "jumping" or "bubbling" continued in primary for 3 weeks.  Thought I was infected.  I was freaked out.  This was an expensive brew.   :-[

Turns out this is normal for certain yeasts.

The sample I took tasted delicious.  And it fermented perfectly to anticipated FG.  So.  Didn't think I would use this yeast again... but I might.  The beer tastes great after all. 

Just weird first experience with this strain.  Thought I'd share for anyone else not familiar with "jumping" yeast.

Yep, the little "jumping" flocs are being lifted by CO2 coming out of solution. Nothing to worry about. 002 is very flocculant, but a great yeast overall.

Just posted on your other thread.  I love the WY equivalent for my English ales.  Absolutely love it.

It's a weird sticky clumpy yeast, but it makes good beer better IMO.

My experience is that 1768-PC does the same thing - less a slurry harvest than a dough harvest!  But the Bitters with it are awesome.

Welcome to the magical world of Fuller's Yeast.  Looks like fermenting with cottage cheese but it makes good beer.

Had a similar experience yesterday. Used WLP001, my first time using a White Labs vial. A couple of notes...no one told me that it acts like a shook up soda upon opening. The smell was out of this world, great stuff.

Welcome to the magical world of Fuller's Yeast.  Looks like fermenting with cottage cheese but it makes good beer.

You should see WLP037 (Yorkshire Square). It makes Fullers look like a lager strain. The cake is so compact that you can tip your carboy/bucket completely over and it won't budge. I tried to take a gravity sample a little early on my barleywine, but I couldn't because my thief kept getting clogged.

Maybe that's why they store them in 2L soda bottle blanks :)

Tip - open it slowly until you just start to hear it, or see bubbles rising in the vial. Close when they reach the top. Repeat a few times until you let enough of the pressure out.
