Guess who smoked the malt for the best smoked beer at the World Beer Cup in Denver?

Yes.  Cold smoking is where it's at.  Three sacks of malt over alder chips for the 15 bbl. batch.

Well done!  How long did you smoke the malt?  I have been tempted to try it in my smoker, but I would have to borrow my buddies cold smoke attachment.  I was thinking of trying pecan chips.  And you did 3 sacks - not all at once, or was it?

They did a double batch, so it was actually 6 sacks.  My box holds one sack on eight shelves and a pound of chips burns for about 90 minutes. 
They like to use alder wood chips, but I keep telling them to source the local stuff since their motto is "inherently Floridian."  Citrus wood makes a smoke very similar to Beech in my opinion.
