Keg additions
« on: April 08, 2010, 10:36:06 am »
I want to add some citrus zest, hops and spices to an American Wheat that I just kegged up.  I dry hop in the keg all of the time but I'm a little concerned about using zest.  What sanitation precautions should I take with the fruit zest and dry spices?

Not sure with the spicwes...but you could dip citus rind in a bit of vodka before adding it.  I would guess the spices will be ok, but orange or lemon rind will have quite a few nasties on it.
*Tapped:
Peach/Raspberry Ale 4.5%/18IBU (6/6/10)
Golden Promise IPA (Keg #2) - 5.8%/73IBU (7/3/10)
Jason's Ball & Chain - 6.4%/63IBU (7/17/10)
All His Merry Men - 4.9%/23IBU (8/1/10)
Citra Amber Ale - 4.8%/23IBU (8/1/10)

If you haven't made this recipe before I would recommend steeping the spices and zest in vodka for a week or two and then adding the liquid to taste.
