Tasting the beers in the session convinced me. It is hard to taste those over the interwebz years later.

Im setteling on doing a 1.055-60 wort, pitching Roeselare, running it in my fermentation chamber for 3 weeks or so at 65ยบ [along side a normal beer], then add my cherries and move it to my spare closet for a year. Spare closet has the water heater next to it so better stability in winter maybe.
