Fermentation temp. question
« on: July 08, 2014, 06:07:49 pm »
Just pitched a couple of hours ago (APA, S-05 yeast 5 gallons) and the ambient temp in my swamp cooler is around 52. I'm guessing it will warm up a bit, potentially up to 60 or so. How cool is too cool to that it will prevent fermentation from starting up? I typically keep the cooler around 65 once things get moving.

IMHO-52F is too cool, 60F is pretty cool and 65F is money.

I don't know how much ambient temp ,matters to the yeast...it's the beer temp that counts.  And 05 will work at 52, although slowly.

You could try putting a sanitized thermometer in the fermenter or getting one of those Fermometer strips to go on your fermenter.

Yep, real slow. +1 to a bucket thermometer.
