Pumpkin Beer Aroma Question

Enjoyed a Souther Tier Pumpking yesterday and noted that the aroma is just like pumpkin pie crust. I've noted a similar aroma in an apple pie cider before. What ingredient lends to this aroma?

Some vanilla extract combined with pumpkin pie spice liquid extract (google search Olive Nation).

are you referring to a biscuity aroma/flavor?

when I think pie crust I think biscuit and butter. you can get some biscuity character from Marris Otter, some from victory (so I've heard, never used it), Munich is more of a bready toasty thing but maybe with just a touch.

I wouldn't try for a buttery aroma,flavor. To me that just tastes like diacetyl.
