I'm curious what size of batch are you brewing.  Is it different when experimenting as opposed to a recipe you have down?

Denny, with my Junior Brown American Mild, I tried dosing with a bit of baking soda at Erockrph's suggestion. Instant fix. I wonder now that im hearing your comments, if low ph in the final product is going to be a common problem in low ABV beers that have a significant amount of hops and roast? Maybe measure your final product ph, dose it with a touch of soda and see what happens?
