Not that low. Straight lambic is traditionally un-carbonated or at a very low level of carbonation.

American Wild - 28b Mixed Fermentation Sour is where I would enter it which calls for moderate to high carbonation but can be lower in higher ABV versions. So there is some wiggle room fortunately. Mine is 6% abv. I have a feeling that by april it will be plenty spritzy and if it somehow went to San Diego it will still be plenty spritzy. My only concern is bottle bombs but mathematically I think it will be just fine.

I ended up using regular 12 ounce bottles and caps but bottled ten of them in some heavy glass 500ml bottles for competition. Time will tell I suppose

Three weeks bottle conditioning and first sample. It seems like about 2 volumes. Normally I am too critical of my own beers. This one is flawless. I locked tgee recipe and will be repeating it a lot. I think it would do well as a 2014 GL 28b American mixed ferment sour, but they will be using 2008 GL at NHC. If 5 bottles survive until march I might try it in Flanders Red.  Anyway, I actually impressed myself on this one. And many many thanks to everyone who contributed
