so canning gurus out there, when canning DME wort, any reason why i just wouldn't  use warm water to mix up my DME and wort, then just put in jars and perform the canning? wondering if boiling would be necessary since the temps and duration of canning is going to kill everything anyway.

The only thing I'd worry about is getting it fully dissolved prior to canning.  Otherwise, there could be issues with foaming perhaps?

When I use leftover wort, I don't boil before canning.

Good thought. And I suppose you want the wort somewhat hot for canning, or doesn't that matter?

I would process it longer if you are starting from warm instead of hot but other than that it should be fine.

I routinely pressure can my starter wort. Just did 4 half gallons sunday night actually. I clean my jars, weight out my DME, add to jar, fill half full with hot tap water, shake till I don't see clumps, let the foam settle, top off and go. This last batch I also added a half tsp of wyeast nutrients just to see if it helps. Once they are all done and cooled off enough to handle I give them another little shake to get the break material off the sides so it can settle.

if you can just over 1 quart of starter in a .5 gallon canning jar you don't even have to transfer, shake the beejeesus out of it to aerate, pop the top and pitch the yeast. leave the dome lid on top and the band just one turn down so nothing slips off. it's as close as one can easily get to sterile starter media at home. stir plates won't work all that well with the canning jar I suppose but I've had good luck (without cell counts or viability checks mind, so grain of salt) with this method in the past.
Do you get good seals with that much headspace? I've read that too much can keep the vacuum from forming properly.

They will seal empty with a vacuum seal attachment like for a food saver, so yes they seal with half full head space.

Step one of two for starter for my Helles....and yep, I cooled wort before putting it into my jug this time. Old dogs can learn new tricks. 8)

Those gallon jugs are much easier to decant too. On my next starter I might do that and add s cerv's shake till frothy method before hitting the stir plate.

agreed. i really like them for my lager starters. cheap, effective, and volume is perfect.

I'm so glad I screwed up and blew my jug apart with hot wort- this has turned out to be a great thread and i now have a new way to make starters (23 Qt presto canner on the way from amazon)!

lesson- sometimes mistakes have a silver lining. ;D

Thanks for screwing up and sharing it!  This turned out to be a great topic and now I'm out to look for a pressure canner.
