Cool thanks. Finishing at 1.005 seems reasonable to me so hopefully I end up somewhere around there. Thanks for all of your help.

well im not sure we are done yet at 1.005. i will take another reading saturday or sunday and see- let you know.

Kegged my version yesterday. Only got down to 1.007 for an ABV of 5.6%. The sample tasted pretty good and I think that I will prefer this to standard cider. I ended up boiling 2.75 gallons of wort with 3 gallons of apple juice for 30 minutes. I used 10 g of old Centennial hops just for the hell of it. It doesn't seem to affect the finished product one way or another which I assumed would be the case...

cool. people over the holidays really liked mine, and also made the comment they liked it better than hard cider. some were sugar/cinnamoning the rim of glass and drinking it.....actually kind of tasty.

Very dominant. I think I've said it, but next time I think I will back sweeten to about 1.015 and see how that tastes. It's good dry, just want to see which I like more.

Yeah, adding fruit seems counterintuitive - it's full of sugar and ends up dry. I usually end up backsweetening my wife's fruit beers for her. And I always backsweeten my ciders, at least a little bit.

Next round,Think I will boil down a gallon of juice with some brown sugar and add this once stabilized.

Mine ended up a tad darker probably light amber. I think I used crystal 60? I am surprised how much apple comes through from basically a 1:1 juice to wort split. I am considering 1:2 juice to wort split next year.
