Homemade Flaked Rye
« on: October 28, 2014, 09:38:24 am »
I just read in the newest issue of zymurgy that you can make flaked wheat by putting it in a hot air popper.  Has anybody tried this with rye?

flaked wheat? or puffed wheat? I haven't seen the new issue yet so... flaked grains are pressed between hot rollers which steam and squish the grains at the same time.

that said, if it is going to work for wheat it will probably work for rye as well.

Make flaked wheat from what?  Flaked grains are rolled under heat and pressure, so I'm not sure how this would work.

I think that the article in zymurgy referred to torrified wheat.  Might work with rye.

Yes it was how to make torrified wheat at home. It should work for other grains.

Do you want to do this with raw rye?

Had some extra raw rye and wanted to use it in a different way.

It worked really well.  The air popper worked, but it was too hard to keep the rye in it, it flew all over.  Then I tried a microwave popper and that worked a lot better.  Just for differences, I tried a pan with a thin layer in it.  That worked well too, but added some toasting.
All methods opened the rye up just a little bit.
Efficiency wise, I used a single infusion mash and got the same efficiency as if I had completed a full cereal mash, so it works.

One option for trying to keep the rye in the popper is to remove the plastic hood and insert the glass top from an oil lamp (you can buy them individually as replacements for oil lamps) to extend the chimney vertically and create a smaller hole. It's what some people do to convert popcorn poppers into coffee roasters.
