I am planning to simply add the nibs in the secondary and rack the stout onto them. How do you add cocoa nibs? ...melt them first? ...use a liquid of some kind to melt them?
you can't really melt cocoa nibs. they are like a nut.
I add them in a bag directly to the secondary or keg. I would pull them out in three or four days or when you get the taste you want.
Id recommend the vodka soak for at least 12-24 hrs. I've used organic nibs a couple times and got an infection. Since I'm very particular with cleaning and sanitizing I assume they were the culprit.
