Choco Milk Stout: How do you add the cocoa nibs?
« on: November 05, 2014, 04:22:31 pm »
First Choco Milk Stout. I am planning to simply add the nibs in the secondary and rack the stout onto them.  How do you add cocoa nibs?  ...melt them first?  ...use a liquid of some kind to melt them?

open the bag and i soak them in vodka, put in nylon bag and drop them in. 48 hours is all i need to get the desired taste and smell.

you can't really melt cocoa nibs. they are like a nut.

I skip the vodka soak and add them in a bag directly to the secondary or keg.  I would pull them out in three or four days or when you get the taste you want.

+1.  Same goes for coffee beans, oak chips, vanilla beans, etc.

I have found vodka soaking and adding until it tastes right works best for cocoa nibs. And this is an "ingredients" post, not "all grain" .... just sayin'. ;)

Id recommend the vodka soak for at least 12-24 hrs. I've used organic nibs a couple times and got an infection. Since I'm very particular with cleaning and sanitizing I assume they were the culprit.

and i actually think the vodka starts breaking down the nibs, and allows them to filter in into the beer. that's why i dont leave them in very long and get a nice cocoa taste pretty quickly.

I put the nibs in a small bag and into the finished beer for about four days then pull them out.  I've never been a big fan of vodka and i guess I'm not so afraid of anything bad on the nibs.

I like to take some nibs and expresso beans and throw them in a liter of vodka. Makes a nice flavored shot to chill or use for choco coffee martini.
