coconut cider

I did this over the summer just for the heck of it and it turned out really good.
1 1/2 gallons of tree Top three apple blend  at 1.050.
enough coconut palm sugar to up it to 1.060 (about 10 ozs.)
two good size braeburn apples plus
two good sized pink lady apples: peeled, cored and made mushy in a blender.
one pack of Munton's
F G was .098 and really tasty. I bottled after three weeks and added a bit more of the sugar to bottle condition.

it does sound kinda nice. I'd want to taste some before committing to more than a gallon but I do like brewing with the coconut palm sugar. It's one of the few simple sugars that seems to lend some discernible flavor of what it is from. I use it in a belgian strong ale that I quite enjoy.

It was a nice cider, Steve.  I enjoyed it.  But more coconut wouldn't hurt!

I'm not a big fan of coconut, but I really like the idea of adding pureed apples to a cider. That might be a nice trick to add to secondary for a cider that could use more apple character.

Works very well. Highly suggest you try it.

BRAIN FART

I forgot to list the coconut that I used. At the two week mark I added six ozs. of large flaked dried unsweetened coconut, then bottled a week later.

I added them for just that reason. I used the Tree Top juice by itself before and it made a bland cider.
By using mostly juice and some apples I hoped to get a good cider without having to deal with a bushel of apples. I'm quite happy with the results.
