My Helles

Nice Xmas present...cracked my Helles and it's simply put, beautiful. You can see my fingers behind glass and through it the mirror on the wall with my reflection. I'd enter this one for competition.

Well done, Ken.  How long did you lager it?  It looks really good.  I served one yesterday that was still a slight bit cloudy - but flavor was well received.

That's pretty much the schedule I use. I drank the 2 pils I made in the spring (Bo, German) at ~ 5 weeks and they were clear and excellent.

went to 30F ambient temp (probe outside of keg) on 11/28.

I've got a Pilsner at day 5 and going to start ramping up today.  Just curious, did you take hydrometer reading to confirm greater than 50% reading before ramping up at day 5?

i did. i was at 60% on day 5.

Make that 2! I like a nice helles. Does it finish dry? I find that if it finishes too sweet, it's hard to drink more than a pint or 2. I think that comes more from minerals in the water, rather than final gravity. I've a friend whose helles finished at the right final gravity, but is a bit sweet in the finish. Mine usually finish at the same gravities but finish drier, I think because I add a little more hardness to the water than he does maybe. I think he just added calcium chloride, whereas I usually add equal amounts of gypsum and calcium chloride. Either way, love the Best Malz pils character.
