While I adore brewing beer, and always will, I do have a spot in my heart for wines. But my all time favorite is Mead in all variations. I'd like to start planning for a meadery, knowing it will take years of research and planning. I don't want to be a large production, but large enough to supply and educate people in this medieval nectar of the gods. Any suggestions and thoughts would be greatly appreciated. Thank you greatly.
