Still steadily bubbling away this morning, 1x per 1-2 seconds. I am very happy with 007 performance so far at 64. Will be taking it up a couple degrees this evening

good idea. 007 moves quickly. i'd guess you will be at least 75% done in 48hrs or so. starts to floc quickly and warming it up to finish works well for me.

First taste, albeit a little early. This Sunday  would be 4 weeks grain to glass. Great flavor, bitterness front and center. Still needs to clear a little. Nice rocky head but still low carbonation after the pour. I'm very happy with how this came out!

It will, just be sure to slowly ramp up after a few days.  It'll help the yeast eat a few extra points and make it a little less sweet.

Yes I pitched at 62, set the controller to 64, ran it there for 6 days, then brought it up 2* per day up to 70 abd it's hanging there. It will be in freezer till next sunday, then upstairs in a closet for a while. I need the freezer for the pilsner (s) I am planning for the 22nd

By the way, this finished at 1.011, for right around 4.6%abv. Definitely not ordinary, well into special range
