Sorry but I'm going to hijack slightly here, but might be knowledgeable to you too Ken  :P

I've been frustrated with my results from vanilla extract...even high quality extract, so I'm leaning towards beans in the future. I've read this thread and many like it and know strategies of using beans. Most use 2-4 beans in s batch. Ken just bought 4 pods for $11 or $12. He's obviously not going to use them all in this batch. How long can you hang onto beans before they go bad? Also, how do you store them?

I found a good price through home brew finds for the ones I bought. I think I paid $20 or less for 12 pods, used 3 and vac packed the rest and put in the freezer. I have not used another batch yet so I don't know if they are or will hold up. Guess I am wondering too now

Yep, I buy them from frontier co-op by the pound and store in the freezer. The stuff your really using is inside the bean so they last well.

That's the cool thing about pulling it from the keg , Ken. You'll just get there faster ! Sample often !

That's the cool thing about pulling it from the keg , Ken. You'll just get there faster ! Sample often !

indeed. i had a breakfast sample today and could detect it. its horrible to do, but i may have to sample every 12 hours  ;D

It's been 12 hours.....sample time!
Never used vanilla bean in my porter , but after I had one at the bar I decided to try it.  My wife already fell in love with this beer-better start the next batch now!

Like the thread on glassware, I have dozens of cool glasses (I know you do,too). But my favorite pint glass of 'em all is the Sammy pint. I have German lager glasses for those, Belgian glasses for those, but American and British ales go in those pint glasses for me.

lots of enjoyment, huh.  so glad for some reason 20 years ago while in europe, i got into collecting glasses. since brewing, i feel like they finally have been put to their intended use.

I have a food saver vacuume sealer. I put my extra beans in and seal them up store them at room temp for up to a year. Best gift for a home brewer! Buy bulk hops and vacuum seal them!

In my most recent batch of vanilla milk stout aged on coco nibs and coffee. I used 3 whole Tahitian beans sliced down the middle then cut into 1" chunks in secondary for one week at 35 F. The vanilla and coco go in at the same time then the coffee last and only for 12-24 hours.

Vanilla comes directly from a family friend that has a vanilla farm. Extremely high quality. 3 beans are needed to balance out all the other flavors going on in this beer.
