American Bock?
« on: October 10, 2021, 08:57:34 am »
I had an idea to brew a darkish lager for fall/winter drinking. Looking at what I have on hand and for something new to try brewing I’ve come up with this:

1.050

33% 6row
33% 2row
20% corn grits(cereal mash)
10.7% Best Red X Malt
3.3% Carafa 2(in sparge)

Edelweiss hop blend from Hop Heaven and Diamond lager yeast.

What do you think?

i believe there is a thread debating classic formulations of the mid-late 20th century american brewers' "bock" beers already. i'd check that out. this recipe looks like you'd hit the idea of an old school american industrial brewer's bock.

For an American Bock style, I think you might want to sub some or all of the Red X with some crystal malt. As written, it's probably closer to something like Negra Modelo than something like Shiner Bock.

Thanks for the feedback. I did brew it as written. Just went into lagering. The red x seems to have contributed more caramel than I thought it would. I will update once it has had some lagering time but looking good so far.
