Going for a double IPA tomorrow. I'd post the recipe, but I already posted it in the recipe forum. :D

Transferring a Black IPA to my keg tomorrow as well.

No matter hold cold it gets or how much snow comes, a half liter of Oktoberfest is sure to make it all alright!

Brewing an APA tomorrow.  1056OG, 41 IBU.  76% 2 row, 17% MO, 7% C40. I don't like a lot of MO in American styles, but I feel this amount is more akin to using biscuit or Victory, except I like the flavor better. Magnum to bitter, and the rest of the hops (Azacca/Cascade) are going in the hop stand . Will dry hop with the same. This one probably won't last long.


So I hit every single number on the head - preboil, post boil volumes, OG, etc. - love that.  Except for one - hop stand temp.  With the ground water temps still so cold (50F), I blew right by my target of 170-175F and cooled to 160F before I caught it.  I've read multiple accounts of people going that cool (and cooler) to steep, but I hadn't gone below 170F yet.  Judging by the smell and flavor of the sample, no worries at all. What I did do was extend the stand from 20 minutes to just over 25. Smells and tastes terrific. I'm looking forward to comparing the end result to what I do now. Will report back.

yes it is really tasty in the APA with1lb of carared.  so much mandarina now so trying a few things. next will be a stammtisch with mandarina.

Describe this one - is it more or less a table beer ?  Lager I assume, or no ?

Lot like a kolsch. Commonly pils and hops of choice. Literally, stammtisch is "table of regulars", so I think it refers to our definition of a session beer. Lower abv, mild hops, and very easy drinking.
 Edit: from what I know, could be lager or ale.

Friday I brewed a stock/Burton ale recipe for 1846 Truman XXXXK, found in Ron Pattinson's book The Homebrewer's Guide to Vintage Ales.

Recipe called for an OG of 1.117. I hit 1.107. So close enough.

5 gallons

17.5 gallons 2 row
10 gallons Maris Otter

Mash in at 145°F for 30 mi. Add boiling water to raise to 152°F for another 60 min.

Lauter and sparge to collect 12 gallons of wort. Boil for 5 hours down to 7 gallons (actually 5 gallons when accounting for the losses to the hops).

4 oz. 10% Northern Brewer (Pellets) 90 min - The receipe called for 8 oz. of EKGs, but I only had 8 ounces in stock.
8 oz. 5% East Kent Goldings (leaf) 30 min

Pitched 3 packets Nottingham yeast. Whacked it with oxygen once I chilled it down to 55° prior to pitching the yeast.

48 hours later.....



25 years of homebrewing, and I still can be an idiot.  Friday night, I chilled the wort, then opened the ball valve to let it drain into the primary.

About a gallon and a half flows into it, and then it is stuck.

How could this be? I have a false bottom over a screened tube.

Here is why I am an idiot.  I bought these giant stainless steel tea balls at the World Market a couple of weeks ago, thinking they would be great to dry hop kegs with. Friday when I am brewing, I needed a pound of EKGs, and only had 8 ounces. So I substituted some Northern Brewer.

Only the Northern Brewer hops were pellets. Instead of using a hop bag, I thought, why not use those tea balls.

Turns out hop pellet particle size is much, much smaller than the mesh of the tea balls.



I let the wort slowly drain into the primary overnight. When I got up Saturday morning to go ice fishing, all five gallons had drained through the hop goo.

What is the ferm schedule like, and how long will you age this? I dont have that book, so just curious

He does not specify fermentation schedules in the book.  I am fermenting it in my 55°F basement.  The great amount of yeast activity is such that the fermometer is reading 62°F.

I will probably secondary it until October or so.  Maybe bottle, maybe not.
