ok guys, put a cap on it and go carb for a while...

I've done overnight mashes in the past, 8-12hrs and I get thinner, dryer beers. So time is a factor along with all the other stuff mentioned before. I'll definately try a shorter mash and see what results I get... would be real nice to shorten the brew day.
