I'm thinking there's a fitting and gaskets I didn't order. What connects these two and seals between the them and the brew kettle wall?

Yep... you need at least o-ring nut and an o-ring. The nut would go on the outside of the kettle before the valve. This is a pretty minimalist approach. With everything, there are multiple ways to skin a cat.

Another option would be to use a full on bulkhead, which is what I would recommend.
