Yeast Nutrient for Mead

Everyone keeps talking about staggered yeast nutrients and such…what's in them?

I ask because I've fairly sensitive to sulfites…it's a big part of what got me into home brewing. Cheap wine is a no-no, and more than a few craft beers seem to have added sulfites as well...

Sulfite is not a nutrient.  In short, it is not part of staggered nutrient additions.  The nutrients are the same or similar as nutrients that can be purchased for beer.
