Fawcett Pale Chocolate
« on: May 20, 2010, 07:17:37 am »
I've tried a few different chocolate malts by different maltsters and Fawcette Pale Chocolate will put some serious coffee and chocolate flavor and aroma in your stouts.  I would even go as far as to say it will rival Founders Breakfast Stout... without using adjuncts.  If you haven't tried it yet, do and see for yourself.  I sub as much as half of the roasted barley sometimes, just keep your color correct.  Most of the other chocolate malts leave too much roasted flavor and not nearly as much chocolate, the coffee takes it over the top.   8)

+1 It's good stuff 4 sure! I ran out of TF&S PC, so I'm using Simpsons Coffee Malt right now. Both have a similar character.  ;)

This is one of my favorite ingredients as it really really imparts a wonderful flavor
and not such a dark color to beer.

i.e. (it makes your beer easier to sneak past BMC drinkers) next thing you know,
they will actually have tasted FLAVOR in the beer.
