If would stick with 60% wheat 40% pils and then use the lemony hops and maybe target a slightly lower mash pH (5.2) and leave it at that. Wheat will give lot's of creaminess and body without any cara anything.

Thanks that sounds like a plan and on the plus side I only have to buy 1lb of wheat and it gets closer to the 3% ABV of what I would consider a summer session beer. Looks like this in BS2 now;

3lb 12oz Pale Wheat Malt
2lb German Pilsner Malt
.5oz Lemon Drop @60
.5oz Lemon Drop @5
Lemon Zest @5
1 oz Lemon Drop DH (7 days)
Wyeast 3068

OG 1.031
IBU 14.7
Color 2.3
ABV 3.3%

Played with it one more time to get it closer to style ranges and got this;

4lb 12oz Pale Wheat Malt
3lb German Pilsner Malt
.5oz Lemon Drop @60
.5oz Lemon Drop @5
Lemon Zest @5
1 oz Lemon Drop DH (7 days)
Wyeast 3068

OG 1.041
IBU 13.6
Color 2.9
ABV 4.4%

With the desire to have lemon and raspberry as different flavors, you might want to explore a Berliner Weiss and serve with zitronensirup and himbeersirup (a simple sugar lemon syrup and a raspberry syrup).  It was a hit with many folks at a party I hosted.

I futzed around with a ginger beer recipe and never really ended up with what I wanted (always ending way too dry and astringent with the added ginger). What I finally settled on was brewing a straight-forward lawnmower beer and then adding a bit of fresh homemade ginger syrup to taste when I pour a glass. Fantastic.

Just did NB La Petite Orange Blanche Belgian Dubbel and added the recommended coriander and the zest of 2 oranges at flameout so I will see how much flavor that added and determine if I want to just do the same with the lemon zest. I can always taste it after a week in to see if it needs more. Also debating adding the .5oz of coriander I had left as well, but thinking that might be over doing it. Also read on another forum that Lemon Drop stands out better with a complimentary hop. I will have 1oz of Sauvin that I'm going to use for a Kiwi Express which has the description of Sauvignon Blanc grapes - "crushed gooseberry".
